The processing of Fontina, as provided by the rules concerning the PDO production, does not alter the characteristics and the nutritional content of fresh milk that pass unchanged into the cheese. This is to give an idea of how important the mountain environment is in order to produce a good cheese. Ever since, our company does its best to enhance the production of pasture Fontina, that can be recognized by the typical traw-yellow color of the texture. You will feel the difference and recognize it by the pungent aroma recalling gresh herbs and flowers and its intense but buttery and sweet taste.

Fontaine di Fontainemore is a semi-hard ripened cheese made from cow's milk. The light yellow compact and firm texture has very tiny holes. During the seasoning, the light brown rind is constantly salted and moistenend.

The name recalls the symbols of the Gressoney Valley: first of all the mountain Monte Rosa but also the Walser community, a population of Germanic origin that used to live in the Alpsand built little wooden villages in this area. Rosa walser is produced with daily milk and processed every day. The texture is soft and creamy, with very fine holes. The color varies depending on the season and goes from ivory-white during the winter to straw-yellow in summer, when the stalls are empty and the cows are going to the pasture. The rind is washed. The taste of Rosa walser is mild and sweet with an elegant aroma and a delicate smell of alpine flowers.

The Toma of Gressoney Valley is a popular table cheese. Its production is limited. We can consider it as a semi-fat cheese, as for the preparation we use semi-skimmed cow's milk. The skimming process is achieved leaving the fresh evening milked milk to sit and settle in containers until the next morning, allowing the cream to rise to the surface and be removed. The remaining milk is used to prepare this delicious cheese with compact texture and savory flavor. Usually this cheese is seasoned from 2 to 4 months.

Robiola Monterosa is a soft cheese with light straw-yellow color. The texture is soft with some small holes and it has a soft, velvety flavor i melts in your mouth, relasing the aromas of mountain herbs, which are typical of alpine pasture. It has a thin light-brown crust.

Inside this white compact cheese you will find small juniper pieces. Caciotta al ginepro is therefore characterized by this particular aroma of juniper, that makes it so appealing and tasty. The yellow rind is washed.

Formaggio valdostano is a semi-soft cheese with a creamy and buttery taste and very few small holes, that are known as 'eyes'. The taste and the texture depends on the ripening period. If aged, this cheese can be more pungent and its thin orange-brown rind darker and harder. It makes a good table cheese and can be used in various traditional recipes. When melted, it becomes even milder and smoother.

Toma di capra is a particular product, different from the other because it is made with goat milk. This cheese is refined and traditional at the same time. The taste is characteristic but not aggressive it maintains a good delicacy with an aftertaste of mountain herbs. Excellent if served with blueberry or berries jam.

Our butter comes from the milk skimming process that occurs duning the making of Toma. The milk collected in the valley is left to sit and settle ovemight. The cream is not pasteurized in order to preserve the qualilty and obtain a fragrant taste and a light yellow color.
